WHY EINKORN?

When we first started learning about food, we realized something surprising. Not all wheat is the same.

Einkorn is considered the oldest cultivated wheat in the world. Unlike modern wheat, it has never been hybridized, which means it has stayed remarkably close to the grain our ancestors grew thousands of years ago.

So why do we love it?

Because it's simple.

Every kernel is packed with the bran, germ, and endosperm just as nature intended. When we mill it fresh, those natural oils, incredible flavor, and wholesome goodness stay right where they belong until they make it into your kitchen.

The result is a flour with a rich, buttery flavor, beautiful golden color, and a baking experience that's a little slower, a little more intentional, and a whole lot more rewarding.

Is it different than modern flour? Absolutely.

Is it better? We certainly think so.

Baking with Fresh Milled Einkorn

  • Einkorn Bread with Butter + Honey on It

    Substituting in Recipes

    Freshly milled einkorn behaves a little differently than the flour you may be used to, but don't worry. Once you get to know it, you'll wonder why you ever baked with anything else.

    For cookies, muffins, pancakes, crackers, quick breads, and many cakes, you can usually substitute einkorn one-for-one.

    For yeast breads and sourdough, einkorn absorbs liquid differently and has a more delicate gluten structure. The dough will often feel softer and stickier than modern wheat. Resist the urge to add lots of extra flour. A gentle hand makes the best loaf.

    If you're just getting started, try replacing half the flour in your favorite bread recipe with einkorn before moving to 100%.

  • Storage

    Freshly milled flour is alive.

    Because the bran and germ are still intact, the natural oils that give einkorn its incredible flavor are also what make it more perishable than conventional white flour.

    For the best flavor and freshness, we recommend storing your flour in the refrigerator or freezer. Allow it to come to room temperature before baking if needed.

    Our favorite way to store it?

    Right in the bag it came in, tucked into the freezer until inspiration strikes.
